We finished out the year in the sweetest way!

Santa Hat Brownies: Using a double recipe of brownies to make a thick base, we cut  the pan of brownies into triangles. Using Brownies is a great way to keep the shape. Cake can get crumbly, so for this treat, we used brownies. Once the base was on the plate, we used white icing and a lot of red food coloring to make a Santa hat red icing. We put it in a glass bowl and microwaved the icing 8-10 seconds at a time to make a soupy consistency. We then spooned a few tablespoons onto the triangle and spread it gently to the edges with the back of a teaspoon. We were careful to do this quickly because once it starts to cool, you will have lines on the icing instead of the smooth shiny surface we wanted. We used 8 mini marshmallows that we flattened out and stuck together at the wider part of the base and made the fluffy bottom of Santa’s hat.

Christmas Tree Brownies: Following the same procedures as the Santa Hat, but using green food coloring instead, we poured the icing onto the brownie. We used a small round icing tip to make lines across the tree and added red or green M&Ms to decorate it.

Santa Hat Cookies:

We began by melting red candy melts in a double boiler. Once the candy had softened to a soupy consistency, I poured the melted colored candy into small ramekin bowls. Using a vanilla double stuff Oreo cookie, the kids dipped one side of the cookie in the red candy melt. We laid them on wax paper and put them in the freezer.  Then, we took four mini marshmallows and squished them flat right next to each other to form the fluffy part of Santa’s hat.  Next, we put white icing into a icing bag that had a star tip. Now, we were ready to see Santa appear. We used an icing bag with a small round tip to make a line of icing at the bottom of the now hardened red candy coating. The icing acted as the glue for them to place the squished mini marshmallows on the bottom of Santa’s hat. We used the star tipped white icing bag and covered the bottom of the cookie to make Santa’s beard. A red M&M was placed in the middle of the white beard and for Santa’s eyes, two black dots of shining icing using a small store bought tube completed the Santa cookie. HO-HO-HO!
